My New Diet

One morning while I was trying to figure out what to have for breakfast I thought 'oatmeal'. Never before have I even cared to even try making my own out of dry oatmeal, it's amazing what you'll try when you are starving. It wasn't too bad- I just had to put in a ton of brown sugar.

No these are not foods that I purchased with coupons or found great deals with, these are part of my new diet.
Raisins- OK, not so new but I always have a problem buying food that only I will eat, I just don't want to spend the money. However, I need snacks, preferrably something sweet, and this is what I came up with. I am still looking for a cookie I can make without the tradiditional ingredients.
Raspberry vinagrette dressing- something needs to be put on lettuce besides mandarin oranges and beets (no,I did not put them on the same salad).
Rice Dream- I couldn't find the coconut milk so I went with this, only to hear the allergist say: that is just a drink with not much for nourishment.
Soy Milk- here's the nourishment, although the after taste is a little 'chalky'.
Goat Milk- growing up with goats and having to feed, milk, and take care of them is not helpful when drinking the stuff. When I put it in my cereal all I could taste and smell and picture were our goats in the barn waiting to be milked (now I feel bad trying to feed it to Caleb). Sorry, Dad, I just can't drink the stuff!!
Last and certainly not least,I know there are many new foods to come, is my oat brick- I wanted to try making bread with oat flour, I was so excited that I found a recipe that did not contain milk or eggs that I started the baking process using the traditional white bread recipe. Yes, my oat flour is way too heavy for white bread recipes, that is why it did not raise AT ALL and I now lovingly call it 'my oat brick'- it still tastes fine with jam.

I love your enthusiasm. Good luck with all of that!

Craisins taste great on a salad, especially with your new choice of dressing.

Raisins really add to the brown sug...oh, I mean oatmeal :).

Love you tons!

You are a saint! Hopefully you'll be able to find some more recipes to make the new diet a little better.

Firstly: I'm just now checking up on you so you have probably already figured out a lot about your new diet (which isn't so new) and you may not ever get this because it's an old post.
Second: You buy coconut milk in cans (if you haven't already figured that out--they are usually in the asian food isle). Also there are many different kinds of flours out there besides wheat. One I've used is coconut flour (I love coconut and all it's many uses) and there is a web site http://www.freecoconutrecipes.com/ that has a lot of gluten free recipes.
